THEN you specify in the Plot dialog, under the preivew, the orientation of the plot on the paper. The size you choose should correspond to how the paper comes out of the printer. Your list of paper sizes includes landscape and portrait orientations of each. Now this is where people get screwed up: You have to pick the orientation of the sheet AND the orientation of the plot on the sheet. You can create a custom paper size for most plotter drivers but cross that bridge if you get to it. Most large format printers have had the standard ISO sizes for decades, as do the PDF and DWF drivers, so that shouldn't require any additional steps.
